Pickling and Fermenting vegetables

Throughout human history diverse tribes of people have sought to discover ways to preserve foods. Preserved foods prolonged their availability for consumption enabling early people to survive seasonal food scarcity and famine. Preserved food quickly evolved beyond their utilitarian origins incorporating many new spices and tastes to become the more tasty and delicious side dishes we know them for today.

I have always loved pickled vegetables and fermented foods such as sauerkraut and kimchi. The purpose of this space is to tell the story of my adventurous experiments in creating exciting new types of these wonderful foods.
